Sugar reduction without the aftertaste: a working method for masking
Sucrose does four jobs at once. Removing it is a texture and time-intensity problem long before it becomes a sweetener problem.
Account for all four functions first
Sucrose delivers sweetness, body and mouthfeel, water activity control, and browning or structure in baked goods. A high-intensity sweetener replaces exactly one of those. Formulators who swap on sweetness equivalence alone end up with a thin, hollow product and blame the sweetener.
Rebuild the missing functions separately: soluble fibre, polyols or gums for body, humectants or process changes for water activity, and reducing-sugar sources or surface treatments where colour development matters.
Fix the time-intensity curve
Sucrose rises and clears quickly. Steviol glycosides and sucralose peak later and linger, which panels describe as liquorice, metallic or "stuck" sweetness. Blending two or three sweeteners with different onset profiles usually gets closer to the sucrose curve than pushing a single one to its ceiling.
Layer masking and modulation on top of the blend, not instead of it. Bitterness blockers, sweetness enhancers and a small dosage of a matching top-note flavour together shorten the tail and restore the fruit or dairy character that sugar removal flattened.
Test against shelf life, not against day one
Reduced-sugar systems drift. Sweetener perception, masking performance and flavour top notes all change over storage, and a formula approved at day one can fail at week twelve. Run accelerated and real-time storage on the actual pack, at the actual fill temperature.
Also confirm the nutrition and claim consequences early. Sugar thresholds interact with front-of-package requirements and with "reduced in sugar" comparative claims, so a formula that lands 1 g over a target can force a packaging redesign.
