Cold-side flavour dosing for craft beer, seltzer and non-alcoholic brands
A flavour that tasted right in a 20 L pilot can drop out of solution in the brite tank. Solubility, dose point and foam are the three things to fix first.
Choose the carrier before you choose the profile
Water-soluble and water-dispersible flavours behave very differently in a cold, carbonated, low-alcohol matrix. Oil-based and highly terpenic systems can ring the tank, create haze or float, especially in seltzers where there is no malt body to carry them. Ask for the solubility class and recommended alcohol range with the sample, not after the first cloudy batch.
Emulsions deliver punchy fruit impact and some deliberate turbidity, which suits hazy styles and cloudy seltzers but works against a bright pilsner. Clear water-soluble systems keep clarity yet usually read lighter on the nose, so the dose lands higher. Decide which trade-off the brand can live with before profile screening starts.
Dose point, foam and scale-up
Cold-side addition after fermentation protects the volatiles hot-side dosing burns off, and it lets you split one base across several SKUs. Dose into the brite tank or inline before carbonation with adequate mixing; adding to a fully carbonated tank without circulation gives stratified results that no amount of extra flavour fixes.
Watch foam. Some flavour carriers and citrus oils are surface active and visibly shorten head retention at working dosage. If foam is part of the brand promise, screen retention at target dose during the pilot rather than trusting a taste panel alone. Scale linearly by volume but confirm with a small production trial: mixing energy, tank geometry and contact time all shift perceived intensity.
Non-alcoholic needs masking, not just more fruit
Removing ethanol — or never producing it — strips body, sweetness perception and volatile carry, leaving wort-derived cereal and cooked notes exposed. Layering more fruit on top rarely fixes it. The workable route is a masking and mouthfeel system to suppress the worty note and rebuild palate weight, then a smaller fruit or hop dose on a cleaner base.
Shelf life deserves its own trial. Citrus and hop-derived terpenes oxidise, and a can that tastes bright at packaging can read flat or cardboardy by month four. Hold retains at real warehouse temperature and taste them on schedule before committing the SKU to a national listing.
