Pea, fava and oat off-notes: where they come from and how to cover them
Beany character is not one defect. It is lipid oxidation, saponins and peptide bitterness arriving together, and each responds to a different tool.
Three separate problems in one glass
Green and beany aroma largely comes from lipoxygenase-driven oxidation of unsaturated fats, producing aldehydes and alcohols such as hexanal. Persistent bitterness usually comes from hydrophobic peptides released during processing, and a soapy, lingering finish often traces to saponins in pea and fava.
Because the mechanisms differ, a single "vanilla to cover it" approach fails. Aroma masking can hide hexanal notes while leaving bitterness fully intact, which is why panels report improvement in the first two seconds and no change in the finish.
Start with the protein, not the flavour
Lot-to-lot variability between protein isolates is frequently larger than the effect of the masking system. Screen two or three isolates blind in your own base before you lock a supplier, and specify a maximum hexanal level in the incoming spec if your volumes justify it.
Process levers matter too: deaeration before heat, minimising shear-induced oxidation, controlling pH away from the isoelectric point for solubility, and choosing UHT parameters that limit further aldehyde generation.
A masking stack that holds up
Effective systems combine a bitterness blocker, a saponin-directed modulator, a sweetness or mouthfeel enhancer to rebuild body lost with sugar or fat, and only then a characterising flavour. Cocoa, coffee, vanilla and berry profiles are easier to land than delicate citrus or neutral dairy, so sequence launches accordingly.
Validate at end of shelf life. Oxidation continues in the pack, and a formulation that is clean at production can develop cardboard notes by month four, particularly in clear or oxygen-permeable packaging.
